Salmon Fillets with Salsa



Ingredients:

1 pt grape or cherry tomatoes, halved
1 cup canned corn, well drained
2 scallions, minced
1 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp onion-flavour mustard
4 salmon fillets

Preparations:

1. Preheat broiler

2. Combine tomatoes, corn, scallions, oil and 1 tablespoon vinegar and add salt and pepper sauce to taste.

3. Stir together mustard and remaining 1 tablespoon vinegar.

4. Broil fillets skin side up 2 minutes. Turn fillets and brush with mustard mixture. Broil 3 to 4 minutes longer, depending on thickness of fillets, until just slightly opaque in center.

5. Arrange fillets on 4 plates, Spoon on salsa and serve.
