Curry Chicken



Ingredients:

2 tsp curry powder
1/3 c canned or boxed chicken broth
1/3 c light coconut milk
2 c chicken breast
Chopped cilantro or minced scallion (garnish)

Preparations:

1. In a saucepan over medium-high heat, whisk together the curry powder, broth, and coconut milk until combined. Bring to a boil.

2. Stir in the chicken pieces. Reduce the heat to medium, and simmer for 5 minutes.

3. Serve over steamed basmati or Texmati rice. Add the garnish.
