Sweet and Sour Pork



Ingredients:

400 gram boneless pork
1 cup flour
2 slices ginger, minced
1/3 cup diced onion
1/3 cup diced green bell pepper
1/3 cup diced red bell pepper
1 mango, peeled, seeded and diced or 1 cup diced pineapple
1 green onion, cut into 4 cm pieces
cooking oil for deep frying

Marinade:
1 tablespoons soy sauce
1 tablespoon cornstarch
1/4 teaspoon salt

Seasonings:
1/3 cup ketchup
4 tablespoons rice vinegar
3 tablespoon soup stock
1 tablespoon soy sauce
2 teaspoons tomato paste
3 tablespoons brown sugar

Preparations:

1. Cut pork into bite size pieces. Combine pork and marinade ingredients in a bowl. Stir to coat. Let stand 10 minutes. Coat pork with flour. Shake to remove excess. Combine seasoning ingredients in a bowl. set aside.

2. Heat cooking oil for deep frying over high heat. Add pork. dep fry 3 minutes or until golden brown. Remove and drain on paper towels.

3. Heat 2 tablespoons cooking oil in a hot wok over high heat. Add ginger and onion. Stir fry until fragrant. Add green and red bell peppers. Cook 30 seconds. Add pork, mango/pineapple and green onion. Stir fry 30 seconds. Add seasonings. Cook until heated through. Transfer to a serving plate and serve.
